Creamy Italian Dressing

Creamy Italian Dressing
Makes about 1 1/2 cups
This creamy vinaigrette pairs best with a crisp lettuce such as iceberg or romaine. "Blooming" refers to a technique where herbs and spices are immersed in warm liquid to draw out their flavors and prevent dried herbs from tasting old and stale.
3 tablespoons  red wine vinegar 
3 tablespoons  grated Parmesan cheese 
1 minced shallot 
1 garlic clove , minced
2 teaspoons  dried oregano 
1/4 teaspoon  red pepper flakes 
1/2 cup  mayonnaise 
1/4 cup  sour cream 
1 tablespoon  chopped fresh basil  
1/2 cup  olive oil 
Salt and pepper 
1. BLOOM Whisk vinegar, Parmesan, shallot, garlic, oregano, and pepper flakes in small bowl. Microwave until cheese is melted (vinegar will look cloudy) and mixture is fragrant, about 30 seconds. Let cool.
2. ASSEMBLE DRESSING Process mayonnaise, sour cream, basil, and vinegar mixture in food processor until smooth. With motor running, slowly add oil until incorporated, about 1 minute. Season with salt and pepper. Serve. (Dressing can be refrigerated in airtight container for 4 days.)

Ranch Salad Dressing

Ranch Salad Dressing

  • 2 cups plain yogurt
  • 1/4 to 1/2 cup mayonnaise
  • 1/2 teaspoon EACH: garlic powder, onion powder, celery leaves, & salt
  • 1/4 teaspoon EACH: pepper, paprika, & dill weed
  • 1 teaspoon dry parsley, OR 2 tablespoons fresh chopped parsley
In a medium sized bowl, combine all of the ingredients. Mix it all very well, and allow it to marinate for several hours or overnight. If desired, add a dash of cayenne pepper. Serve as a dip or dressing for salads.

Olive Garden Salad Dressing

Olive Garden Salad Dressing 

I make a creamy version also... Changes in ( )

3/4 c. olive oil or canola (1/2 c.plain yogurt + 1/4 c. Hellman's USE the good stuff it makes a difference)
1/4 c. vinegar
1/4 t. pepper
1/2 t. Italian seasoning
1/4 t. garlic salt
1/4 t. sea salt
1/2 t. parsley
1/2 t. garlic powder or 2 cloves fresh minced garlic
1-3 T. sugar depending on taste

Cottage Cheese and Dill Dressing

1/2 c. cottage cheese
1/2 c. mayo
1/2 c. milk
1 T. olive oil
2 T. lemon juice
1/8 t sugar
salt and pepper to taste
1 clove garlic crushed
1 t. dried dill weed

Blend together all ingredients. Let sit 1 day in the refrigerator before serving. Makes 1 3/4 c.
