Ranch Salad Dressing

Ranch Salad Dressing

  • 2 cups plain yogurt
  • 1/4 to 1/2 cup mayonnaise
  • 1/2 teaspoon EACH: garlic powder, onion powder, celery leaves, & salt
  • 1/4 teaspoon EACH: pepper, paprika, & dill weed
  • 1 teaspoon dry parsley, OR 2 tablespoons fresh chopped parsley
In a medium sized bowl, combine all of the ingredients. Mix it all very well, and allow it to marinate for several hours or overnight. If desired, add a dash of cayenne pepper. Serve as a dip or dressing for salads.

Olive Garden Salad Dressing

Olive Garden Salad Dressing 

I make a creamy version also... Changes in ( )

3/4 c. olive oil or canola (1/2 c.plain yogurt + 1/4 c. Hellman's USE the good stuff it makes a difference)
1/4 c. vinegar
1/4 t. pepper
1/2 t. Italian seasoning
1/4 t. garlic salt
1/4 t. sea salt
1/2 t. parsley
1/2 t. garlic powder or 2 cloves fresh minced garlic
1-3 T. sugar depending on taste

Texas Sheet Cake

Texas Sheet Cake

Sift in large bowl:
2 c. Sugar
2 c. Flour

Bring to a brisk boil and pour over dry ingredients:
1 stick of butter or oleo
4 T. cocoa
1/2 c. shortening
1 c. water

Add to above mixture and mix well:

1 c. buttermilk
1 t. vanilla
1 t. baking soda
2 eggs beaten

Bake 350 for 20 min. (in of course a jellyroll pan or large cookie sheet, greased)

Icing

Mix 1 stick oleo (butter) (melted)
6 T. milk
4 T. cocoa

Bring to a boil, remove from heat, add 1 box (1 lb) powdered sugar, 1 t. vanilla and 1 cup of chopped nuts (you are what you eat). Pour over cake as soon as comes out of the oven. MMMM

Snickers Cookies

Snickers Cookie

Super easy...

1 bag of mini snickers
1 roll of sugar cookie dough
colored sugar for rolling

Take off small amount of dough, wrap around snicker mini, roll in sugar, place on parchment lined cookie sheet (IMPORTANT!), bake at 350 until lightly golden (about 10 minutes give or take!).

Yummy... Yield... how every many snickers you don't eat while making the cookies... :) really it just depends on how much dough you use in covering them. 2-4 doz.

Corn Bread

Corn Bread

3/4 c corn meal
1/4 c. sugar or honey
3 t. baking powder
1-1/4 cups sifted flour
1/2 t. salt
1 beaten egg
1/4 c. melted fat (butter y'all)

Bake at 350 till golden brown.

Scalloped Corn

Scalloped Corn

1 beaten egg
1 c. milk
1 c. crushed saltines (about 22)
1 17 oz can creamed corn
1/4 c onion, chopped
1 T. melted butter

Combine egg, milk and 2/3 c. saltine crumbs, 1/4 t. salt, and dash of pepper. Stir in corn, onion, and mix well. Turn into a 1qt casserole dish. Toss butter and remaining cracker crumbs, sprinkle  on top of corn mixture. Bake, uncovered in a 350 oven for 1 hour or till a knife comes out clean.

Serves 6

Is easily doubled. 

Sweet Tater Casserole

Sweet Tater Casserole

3/4 cup butter or margarine
1 (13oz.) jar marshmallow creme
6 cups mashed cooked sweet potato
1 cup firmly packed light brown sugar
1 tablespoon ground cinnamon
1/2 teaspoon salt
1 teaspoon ground nutmeg
4 large eggs, lightly beaten
4 cups miniature marshmallows*
1 cup pecan halves, toasted
3 tablespoons grated orange rind (optional)

Cook butter and marshmallow cream in a dutch oven over low heat, stirring until smooth; remove from hear, Stir in sweet potato and next 4 ingredients.  Stir in eggs until blended.  Spoon into 2 lightly greased 11x7 inch baking dishes.*

Bake at 350 degrees for 35 minutes.  Arrange marshmallows and pecans evenly over casseroles and bake 10 more minutes.  Sprinkle casseroles evenly with orange rind, if desired.
